Michelin-star French chef Bruno Menard will be cooking at the Anantara Siam Bangkok’s Madison Steakhouse on March 9.
Menard was destined for a career in hospitality, with his father an esteemed chocolatier and his sister running a hotel in Paris. He was passionate about food from a young age and developed his craft at restaurants around the globe, garnering particular recognition at the Ritz Carlton in Atlanta, among other US restaurants.
In 2008, Menard’s Tokyo restaurant L’Osier gained three Michelin stars all at the same time, the highest recognition awarded by the guide. He has since been a judge on “MasterChef Asia” and is also president of Bocuse d’Or Pacific, the world’s most prestigious food competition.
At Madison Steakhouse, his dishes will be paired with fine vintages from Chile’s Concha t Toro vineyards. Diners can enjoy the Cabernet Sauvignon, Cabernet Franc and Shiraz Trio from Maipo Valley 2015 with their four-courses feast.
On the menu are lightly poached salmon coated with herbal jelly and horseradish Chantilly, paired with a 2017 Sauvignon Blanc Sendero from the Central Valley; and Wagyu beef tenderloin with foie gras carrot flan, Cassis and onion chutney cocoa vinegar, and hibiscus oil.
